When we first arrived from our Holy Land Pilgrimage, I can’t help but marvel at the blessing of green earth, green grass, and green trees in the Philippines. cold and fresh drink in regina rica tanay
Walking around Mama Regina’s Ricaland in Tanay gave me an idea. What is it? You may ask. Let me explain.
As I leisurely walked through the vast garden, I was drawn to see several plants ready to be harvested. I saw lines of pepino (cucumber), calamansi, stalks of leafy pechay and mustard plant, tanglad (lemon grass) and lush pandan. What if I blend all these delicious plants? Raw? Yes. All of it… raw. Hmmm...it might taste delicious. And better yet, add a piece of ginger, some brown sugar and lots of ice! Gosh! I have mixed a refreshing cold drink. Regina Rica Cold Drink!
Come. Let us go to the kitchen and try it. Of course.. we need to harvest the fresh vegetables we will need… washed and cleaned
1-2 pieces pepino
2-3 pieces of pechay leaves
1 good size mustasa leaf
7 tanglad leaves
3 pandan leaves
1 –inch thick ginger
sugar or honey to taste
½ cup calamansi juice
(please adjust amount according to your own taste. Thank you.)
Now, put 1-2 glasses of water in the blender (please see to it that your blender is sturdy and can withstand 2 to 3 minutes of continuous churning. Some blender gets overheated). Add sliced pipino and blend. Then, one by one add the rest of the items and sugar. Taste to your likings. Serve on glass with straw and lots of ice. Enjoy!
